Illegal pheasant hunting and the development of agriculture on previously unused lands lead to the complete destruction of this bird in its natural environment. Monitoring conducted in Baku city markets showed that pheasant meat was supplied by poachers and amateurs who keep these birds in poultry farms. However, they are not always able to provide consumers with pheasant meat. That's why pheasant dishes are not always available in restaurants. At the same time, restaurants operating in Baku, especially Georgian restaurants, are officially ready to include pheasant dishes in their menus, but they demand a guarantee of uniform meat supply throughout the year. On average, the demand for pheasant food in a restaurant is about 2000 people per year, 5-6 people per day.
The production process is carried out in stages
Stage 1: As we mentioned, the mother flocks are housed in 6 barns each designed for 100 bird families. During the season (April-July), it is predicted that 1000 eggs will be bought from this area per day. Considering that the egg season is about 120 days, 120,000 eggs are bought from the mother flock stables per year.
Stage 2: The eggs collected daily will be sent to the Incubation area. Here they will be placed in the Incubator designed for pheasants. After 24-25 days, chicks start to hatch. It is inevitable that 10,000 chicks will die during the hatching process. Thus, after losses, 110,000 chicks will be placed in brooders.
Stage 3: Pheasant chicks grown up to one month will be sent to feeding grounds. Here the birds will live completely free, protected from wild birds and predators. Another 10,000 birds are expected to die during the breeding season. Thus, the number of birds to be slaughtered in 1 year is predicted to be 100,000.
Stage 4: Field-raised birds will be sent to slaughter starting at 6-8 months of age according to sales orders. Here, the birds will be sent to refrigerators after slaughtering, butchering and evisceration processes. It is thought that the poultry to be sold will be put in special packages. Finished products will be delivered to customers in vehicles equipped with refrigeration units.
